This Chicken and Stuffing Slow Cooker recipe is a hearty, delicious comfort food casserole at its finest! Plus, it's easy and has very few ingredients. You can have it for everyday or special occasions like Thanksgiving.

Ingredient Notes:
- Chicken: I used 3 large boneless, skinless breasts with total weight of about 2 pounds. You could also use boneless, skinless thighs if you want. Thighs will be fattier and more flavorful. I would stick with about 2 pounds of chicken for this recipe.
- Stuffing: I used store-brand cubed, seasoned stuffing for this chicken and stuffing crockpot recipe, but you can use any stuffing mix you have, like Stove Top brand.
- Cream soup: I used cream of mushroom, but cream of chicken, broccoli, or celery would also be delicious. Use what you have or what you like.
- Paprika: I love the smoky, lightly spicy flavors the smoked paprika adds to this slow cooker chicken with stuffing recipe, but if you prefer the sweet paprika, I believe that would be delicious as well.

Add one of these additional ingredient combinations if you wish, but don't add too much or you risk ruining the recipe.
- One cup fresh or frozen green beans and 1 teaspoon garlic powder (added on top of chicken) - Note that you may need extra salt if adding green beans.
- One cup chopped red onion (added to the bottom before adding chicken)
- One cup chopped apple and/or chopped celery (added under chicken)

Step 1: Place chicken breasts in slow cooker. Add salt and black pepper.

Step 2: In a medium-size bowl, whisk together cream soup and broth until mostly smooth. Pour mixture over top of chicken.

Step 3: Evenly distribute stuffing over top of chicken. Sprinkle cranberries and paprika over top of stuffing.

Step 4: Cover and cook 3-4 hours on high or 4-6 hours on low until chicken is tender and internal temperature reaches 165ยฐF.

๐ญ Expert Cooking Tips
- Add the stuffing to the slow cooker last unless you want it softer and more incorporated into the rest of the ingredients. It will soften due to the liquid below, but it will mostly retain its shape and be a bit firmer in texture.
- This slow cooker chicken and stuffing casserole is done when the chicken is tender and there are no pink juices or pink flesh.
- The cooking times are given as estimates, as slow cookers vary in their temperature ranges. If you know your cooker runs hot, plan accordingly. Mine took about 4 hours on high.

If using a stuffing mix like Stove Top, should the seasoning packet be added on top of the stuffing, or should the stuffing be pre-made with the seasonings mixed in as per the cooking instructions?

Great question, Kathie! My stuffing didn't have a separate packet of seasonings - they were just mixed in. I would mix the seasonings in with the dry stuffing, but don't pre-make any of it. In other words, no pre-cooking. Just mix the dry stuffing with the packet of seasonings, and then add on top of the chicken as per the instructions. Hope that helps!
