Strawberry Spinach Salad with Lemon Poppy Seed Dressing

This strawberry spinach salad is lightly crunchy, slightly sweet, and moderately tangy with little nutty bits throughout.

Spinach Strawberry salad with lemon poppy seed dressing

The lemon poppy seed dressing is a wonderful addition, and yet the entire salad is so simple and quick to make.

I love to use hemp seeds in this recipe, but feel free to use sunflower seeds, almonds, or any other nut or seed you have on hand.

This recipe is so adaptable and can be delicious multiple ways.

What You'll Need

For the Salad:

Spinach

Strawberries

Hemp seeds (or sunflower seeds)

For the Dressing:

Lemon juice and zest

Honey

Dry mustard powder

Salt and black pepper

Dry basil

Olive oil (or oil of choice)

I love how the strawberry sweet/tartness mixes with the distinct mouth-feel of the spinach and the sweet-tart dressing flavors. So simple, but so yummy!

Tips

If you don't have spinach, you can certainly use any raw greens that you have on hand. Leaf lettuce, head lettuce, even arugula would be great.

However, the spinach is definitely a superstar in this recipe and should be used if at all possible.

The hemp seeds are not always easy to find, so you can use sunflower seeds as a substitute.

I think hemp seeds taste a bit like raw sunflower seeds anyway - sunflower seeds are just bigger. If using, I would recommend using unsalted sunflower seeds.

If only using part of the salad right away, I would not add the dressing to the whole batch. The salad will get wilty if storing with the dressing on it.

One suggestion is to serve the dressing separately and let everyone get what they want.

Quick Strawberry Spinach Salad

Ingredients

  • 5 ounces baby spinach, thoroughly washed
  • 2 cups strawberries, cleaned and sliced
  • ¼ cup hemp seeds

Dressing

  • 2 tablespoon lemon juice
  • 2 teaspoon lemon zest
  • 1 teaspoon raw honey
  • ¼ teaspoon dry mustard powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ cup olive oil
  • ½ teaspoon dry basil

Instructions

  • In a small jar, add all dressing ingredients.  Cover and shake vigorously. 
  • In a medium bowl, add spinach, strawberries, and hemp seeds and gently blend to combine.
  • Pour dressing over salad mixture and gently combine with a fork or tongs.  Serve right away.
