Roasted Brown Sugar Pork Tenderloin

- 2 tablespoon olive oil
- 2 pound pork tenderloin
- 1 tablespoon ground dry thyme
- 2 teaspoon ground dry marjoram
- 1 teaspoon ground dry oregano
- ⅓ cup brown sugar
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Preheat oven to 375 F.
Add the olive oil to a large cast iron skillet and heat to medium-high.
While the pan heats, in a small bowl, add the thyme, marjoram, brown sugar, salt, and pepper and blend well.
Place the pork loin on a large plate or platter, and massage the brown sugar and herb mixture into the pork on all sides until all the mixture is mostly adhering. It will begin to take on some of the natural juices of the pork as you gently massage it in.
Add the seasoned pork to the hot skillet and brown on all sides (about 1-2 minutes each side).
Place skillet in the oven and cook uncovered for 30-35 minutes or until nicely browned and internal temperature is 150 F. After removing from the oven, add about ¼ cup water to the pan juices and mix with a fork. Let the meat sit for 10 minutes before cutting (to help seal in the juices).
