Ranch Bacon Potatoes (quick & easy)

These ranch bacon potatoes are very cheesy and flavorful! Your whole family will love them, and you will love that they're so easy to fix.

Ingredients

  • 4 slices bacon lean
  • 2 pounds potatoes about six medium, chopped
  • 16 ounces sour cream or plain yogurt
  • 1 ounce Ranch dressing mix (dry powder mix)
  • 1 cup cheddar cheese shredded (preferably sharp)

Instructions

  • In cast iron skillet, cook bacon for 10 minutes or until crispy.
  • Meanwhile, preheat oven to 400 F.
  • Cut up potatoes into ½ to ¾-inch pieces.
  • When bacon is done, reserve ¼ cup of bacon fat in skillet.
  • Toss potatoes in bacon fat to coat.
  • Cover potatoes and cook 30 minutes in the oven.
  • Meanwhile, mix sour cream and Ranch seasoning mix together in medium bowl with a whisk.
  • Shred cheese.
  • After 30 minutes of cooking, uncover potatoes and stir in Ranch seasoning mix and sour cream. Mix and top with shredded cheese and crumbled bacon.
  • Cook uncovered 10 minutes on 400 F to melt cheese.
