Easy Beef Stew Slow Cooker Recipe
Ingredients
- 1-½ pound stew meat (or other beef), cut into ½-inch cubes
- 1 medium onion, chopped
- 4 medium potatoes, chopped (about 2 cups)
- 1 large carrot, chopped (about 1 cup)
- 2 tablespoon olive oil
- 1 tablespoon paprika
- 1 tablespoon dry oregano
- 1 tablespoon dry thyme
- 1 teaspoon salt, more to taste
- ½ teaspoon ground black pepper
- 3 cups beef broth
Instructions
- Turn on slow cooker to high heat.
- Add meat and onion to slow cooker, drizzle with olive oil, and blend.
- Add the rest of the ingredients and stir to incorporate.
- Cover and cook on high for 6-8 hours or until meat is tender and vegetables are softened.
- Serve with salad and bread of choice.
