📋 Recipe
Homemade Hamburger Helper Cheeseburger Casserole
Ingredients
- 1 tablespoon olive oil (if ground beef is extra lean)
- 1 pound ground beef
- 1 medium onion, chopped (about 1 cup)
- 1 tablespoon garlic, minced
- 1 cup green bell pepper, chopped
- 1 teaspoon dry oregano
- 1 teaspoon dry thyme
- 1 teaspoon dry marjoram
- 1 teaspoon dry basil
- 1 tablespoon sweet paprika
- 1 large carrot, chopped
- 1 15 ounce can crushed tomatoes, undrained
- 1 14,5 ounce can petite diced tomatoes, undrained
- 16 ounces uncooked rotini or macaroni
- 4 ounces cream cheese
- 1 cup sharp cheddar cheese, grated
- 1 cup milk
Instructions
- Preheat heavy saucepan or Dutch oven on medium. If ground beef is extra lean (85% or higher), add oil.
- Add ground beef, onion, bell pepper, garlic, oregano, thyme, marjoram, basil, and paprika. Cook for 10 minutes or until ground beef is browned and veggies are softened.
- Add carrots and cover. Cook for 10 minutes.
- Add tomatoes and cover. Cook 20 minutes.
- Uncover and turn heat down to low.
- Meanwhile, cook pasta according to package directions. I used rotini, but you could also use macaroni or any short pasta of your choice.
- When pasta is done, drain and add cream cheese, cheddar cheese, and milk. Cover until cheese is melted, stirring periodically (should take about 10 minutes total).
- Add pasta mixture to meat mixture and stir until incorporated. Serve right away with your favorite bread and salad.
