    Chicken Stuffed with Cheese Wrapped in Bacon

    Chicken stuffed with cheese wrapped in bacon - pure deliciousness that's perfect for everyday or special occasions! All the better when adding broccoli to the mix!

    Bacon Wrapped Stuffed Chicken

    A lot of my recipes include bacon and broccoli - because I love them both so much, and they go great together! Thus, this flavorful chicken breast wrapped in bacon with cheese and broccoli stuffing was born!

    Delicious and nutritious broccoli and garlic are included in the cream cheese filling. Then each chicken breast is wrapped in three slices of bacon and tucked underneath.

    The bacon adds a nice smoky flavor that really enhances the dish.

    Such a delicious recipe for weekday dinners or for special occasions.

    Using only a handful of ingredients, but so savory and full of flavor! Perfect to put on your weekly or monthly recipe rotation!

    What You'll Need

    2 whole chicken breasts (1-2 pounds total) boneless, skinless, trimmed

    1 cup fresh broccoli, finely chopped

    4 ounces cream cheese, softened

    salt

    ground black pepper

    3 slices bacon (more if desired)

    1 tablespoon garlic, minced

    drizzle of oil

    Making Bacon Wrapped Stuffed Chicken Breast

    Preparing the chicken breasts for the filling is quite simple.

    Using a sharp small knife, just cut a pocket into the chicken breast long ways. Make sure not to cut the chicken all the way through. You want a "pocket" to stuff that's closed on the bottom.

    Start at one end, leaving about ½ to 1 inch, and slice into it without going all the way to the other side. Stop cutting when you get about ½ to 1 inch from the other end (as in the image below).

    After filling with broccoli and cheese mixture, you will then press the chicken breasts together at the seams and set them both seam side up in a lightly oiled casserole dish.

    At this point, you will wrap the bacon over the top and around the chicken and tuck the ends underneath.

    Serve with a knife for cutting and a side salad and potatoes or other carb of choice.

    Tips

    Use a sharp knife to cut your chicken slit, and remember not to split the chicken all the way through. You want a pocket to stuff with the cheese and broccoli mixture.

    Wrap the bacon as shown in the picture above, snugging it around the chicken and tucking the ends underneath each chicken breast. This will keep them in place and make it easier to serve.

    The first time I made this, my bacon was extra wide and thick (as seen in the picture) and I used 3 slices of bacon cut in half.

    Since then, I've made this recipe with a more narrow bacon that was thinner, and I used more bacon (5 or 6 slices).

    The key here is to cover the chicken breast with bacon, so use as much as you need in order to fully cover the chicken (as in the pictures) or as you desire.

    Keep in mind that each breast is a lot of meat and would be too large of a serving for most people, so I like to cut each one in half before serving.

    Serving Suggestions

    You may like to serve with my Creamed Sweetcorn, my Creamy Scalloped Potatoes, or my Green Beans Almondine.

    All of these side dishes would pair wonderfully with this bacon wrapped chicken (as well as with each other if you want to serve them all together).

    Also marvelous served with a cup or bowl of hearty soup like my cheesy Crock Pot Potato Soup or my with my Recipe for Mushroom Risotto (which is a great pairing for special occasions like Valentine's Day).

    Ingredients

    • 2 whole chicken breasts (1-2 pounds total) boneless, skinless, trimmed
    • 1 cup broccoli, finely chopped
    • 4 ounces cream cheese, softened
    • ¼ teaspoon salt
    • ¼ teaspoon ground black pepper
    • 3 slices bacon, cut in half
    • 1 tablespoon garlic, minced
    • drizzle of oil

    Instructions

    • Preheat oven to 400 F.
    • Cut a partial slit length-wise down the inner side of each chicken breast. Don't cut all the way through. You're looking to create a "pocket" for the filling to be placed in.
    • In a medium-sized bowl, combine broccoli, garlic, cream cheese, salt, and pepper (I find it easier to just use my hands).
    • Ball up half the filling mixture and place in each chicken cavity and close.
    • Drizzle oil in the bottom of a casserole dish.
    • With seam side up, wrap bacon slices around each chicken breast, tucking in at the bottom (3 halves per breast).
    • Place in the oven and cook 40-45 minutes or until internal temperature is 165 and bacon is browned.
